I am a carb LOVER! I rarely have a meal that isn’t build upon potatoes, bread, rice or pasta. For Summer I am making a conscious decision to eat more greens and be a little less dependant on my delicious carbohydrates.
Both of my sisters introduced me to this salad, and it has earned it’s spot in the rotation of weekly dinners ever since.
- Chicken breast- I like breaded chicken breast but you can keep it simple.
- 1 rasher- bacon is always a good idea
- Lettuce-(1 cup) I like iceberg but it is all about personal prefernce.
- Avocado (1/2)
- Cucumber (1/4)
- Cherry Tomatoes (4)
- Scallion (1/2)
- Lightly roasted pine nuts (tbsp)
- Dalkey Mustard (1 tspn)
- Rapeseed Oil (1/2 tspn)
- Balsamic Vinigar (1 tspn)
This is one of my favourite dinners now, and I look forward to it every week. As it is so green, I feel full but without feeling sluggish or bloated. If you are trying to start a healthier lifestyle, this is a great salad to get you excited about eating cleaner food.
You can play with this recipe too, if you don’t like cucumber try it with peppers, or switch iceberg lettuce for romaine. The more colourful you can make your plate, the better.

At a glance that may seem like a lot of fat, but the bulk is coming from the Avocado which we know is high in very healthy fats. This meal is packed with nutrients and is delicious and filling, which is great because I can never do any sort of diets as I cannot stand feeling hungry!
