Pancake Tuesday was originally a religious ritual, where people would rid their home of foods such as eggs and flour before lent, when they would fast. Nowadays it’s more of a day to appreciate Nutella!
I won’t be staying away from crepes today, or their soul mate Nutella, but I will enjoy the protein packed pancake for breakfast, made of two simple ingredients: 2 eggs and 1 banana.
In the past I a had tried to whisk the eggs and mash the banana but I have learned there is a much easier option: blending!
If you have a nutri-bullet or a similar blender, then simply blend your banana and eggs together and then fry over a medium heat. Cook evenly on both sides and enjoy a healthy and clean start to Pancake Tuesday!
