WARNING do not read this if you are even slightly hungry, this cake is so yummy!
If you read my post on the Boutique Bake Belgian Brownies, than you would know that I am a terrible baker, and love a tasty mix that gives the impression that I actually can bake.
I had tried the Zingy Lemon Drizzle cake before, but I hadn’t made it myself so a couple of Sundays ago I decided I would take an hour out of my afternoon (Conor was watching the world cup at the time, so I was happy for a distraction) and baked this gorgeous lemon loaf.
All you need is:
- 1 Lemon
- 3 eggs
- 150g of softened butter
There are two packets from Boutique Bake; A large mix which is for the lemon cake itself, and a smaller pack which is for the yummy zingy drizzle. Keep the smaller pack aside with the lemon.
- Add the Lemon cake mix in a large bowl with 3 eggs and 150g of butter (softened)
- Whisk until completely smooth
- Grease or line a tin and pour the mix in
- Once your oven is preheated (check the instructions for exact temperatures on different ovens)
- Bake until you can place a skewer through the cake and it comes out dry.
TA-DAH!!!! Doesn’t it look lovely? It smells amazing.
While the loaf was baking I took the drizzle mix and added the juice of a lemon and stirred.
Once the loaf was baked I then took a skewer and poke some holes about 3/4s of the way down into the loaf. I then took the drizzle mix and poured it over the loaf, particularly in the holes poked through.
Then I OBVIOUSLY boiled the kettle and make a cup of tea while waiting for the cake to cool.
YUM this cake is SOOO good! This is the perfect treat for the weekend, so easy to make, but I always think things taste better when you made them yourself anyway.
